The way to change the typing language on your Xperia 1 differs a bit from previous models as the Xperia 1 uses Gboard as the pre-installed keyboard app instead of Swiftkey which was standard in previous Xperia devices. In order to add a new language to gboard, please follow the steps below.

Find and tap Settings > System > Languages & input > On-screen keyboard > Gboard > Languages > Add keyboard.
Find and tap the language you wish to add.

To change the language when entering text, simply tap and hold the space bar and choose the language that you want to use.
