I just bought a new Xperia xa2 and the camera app looks different than on any Web tutorial / picture /... I am also missing some features. Is this normal or am I just missing some settings?

THe screen shots that you have found are showing how the camera looks in Android Oreo and earlier Android versions. In Android Pie the UI of the camera was remade a bit and you can find some more information on how it works on the links below.

You can also go to the the link below and check under "Camera" since this user guide is updated for Android Pie, which the Xperia XA2-series one is not. Keep in mind that not all features may be available in your device, but most of the settings are the same.
